Chef Pam McKinstry created this recipe in 1978 for her restaurant on Nantucket Island. In 1991 it was chosen in the Gourmet Magazine as one of the top 25 recipes from the past 50 years. These moist and delicious muffins are sold by the dozen, and cost a little more than their counterparts due to the wonderful Ingredients, which include Carrots; Apples; Pineapple; Raisins; Coconut; and chopped Walnuts or pecans, your choice. So much goodness in one muffin, you will love these. They actually taste better on the 2nd day.
